This is freshly blended, you can still see those bubbles in the paste!
Thai Style Sweet Sour Chilli Paste
Ingredients
- 3 stalks lemongrass, take only the white tender bulb, chopped
- 1.5 inch by 1 inch galangal
- 5 cloves garlic
- 2 red chillies (or 1 red chilli and 2 bird's eye chilli if you prefer spicier taste)
- 2 shallots
- 2 spring onions
- 1 tbsp cooking oil
- 4g shrimp paste / belacan
- 80ml ml lime juice
- 1 tbsp sugar
- 3 tbsp fish sauce
- 6 bunches coriander leaves and stalks, chopped
- Blend all ingredients (except coriander leaves) in a blender/food processor.
- Heat up a pan, let the paste simmer for 3 minutes.
- Add in chopped coriander leaves and stalks and simmer for another 30 seconds.

- 2 条 红辣椒 (或1条红辣椒加2条小辣椒)
- 2 粒 小葱头
- 2 支青葱
- 1 汤匙 食油
- 4 克 马来煎
- 80 毫升青泞汁
- 1 汤匙糖
- 3 汤匙 鱼露
- 半杯 香菜切碎
- 将所有材料(除了香菜)放入搅拌器搅碎。
- 热锅,将(1)稍微煮大约三分钟。
- 加入香菜,再煮上大约30秒,熄火。
